根據衛生福利部民國 109 年統計資料顯示,台灣的十大死因中第十名為慢性肝炎和肝硬化,癌症十大死亡原因中第二名為肝癌和肝內膽管癌,其中氧化壓力所造成的肝臟受損是引起大部分肝病的主要原因之一。而蒜頭已被證實具有多種生理功效,如降低膽固醇和血壓等;黑蒜亦被證實具有抗氧化功效,且能改善冠狀動脈硬化。於本研究中使用家用電子鍋自製黑蒜,分別經 7、14 和 21 天熟成後,進行水分、褐變程度、游離還原醣、游離胺基酸、總酚類化合物及清除自由基能力等分析試驗。實驗結果發現熟成過程會發生梅納反應,導致游離胺基酸含量隨熟成時間增加有顯著的下降,但游離還原醣反而顯著上升。總酚類化合物的含量在黑蒜的 7、14 和
21 天熟成過程中含量分別為 81.8、185.5 和 181.8 mg GA / 100 g 新鮮樣品,而黑蒜的熟成時間越長清除自由基的能力有越強的趨勢。而利用穩定轉染 ARE-luciferase 質體的 HepG2-C8 細胞作為活化 Nrf2抗氧化途徑之篩選平台,評估黑蒜提升細胞內抗氧化能力,結果發現 14 天的黑蒜水萃物的效果最為顯著。且感官品評(50 位受試者)針對生蒜(0 天熟成)和7、14 和 21 天熟成黑蒜的色、香、味及口感等喜好度進行評估,發現 14 天熟成黑蒜也較被接受。未來期望本研究可作為民眾對於電子鍋自製具保健功效之黑蒜的參考資訊。
