兔眼藍莓 (Vaccinium virgatum) 屬杜鵑花科的常綠灌木,具有美味和高營養價值。藍莓葉富含酚酸與類黃酮,因此具有重要生理功效如抗氧化和抗癌活性,可被開發為保健食品。藍莓葉通常被當成廢棄物丟棄,但葉子的總多酚含量為果實三倍。本報告目的係由兔眼藍莓葉萃取酚酸和類黃酮,利用高效液相串聯質譜儀定性定量,製備奈米乳化液並測定抗小鼠老化活性。結果顯示,30% 乙醇為最適萃取酚酸和類黃酮溶劑,二十種不同兔眼藍莓葉品種中,NTU 104 品種具有較高含量之總酚酸 (136.09 mg/g),Misty 品種則具有較高含量之總類黃酮 (111.36 mg/g)。使用 Waters Acquit

當自由基的產生與抗氧化系統之間無法平衡時,即會造成氧化壓力(oxidative stress),被證實與許多疾病相關,如心血管疾病、癌症和糖尿病等。當人體處於氧化壓力下,食用富含抗氧化劑的天然食品可能有助於改善自由基的產生與內源性保護作用之間的平衡。近年來,人們對天然抗氧化物益發關注,多酚類化合物為其中之一,常見於各種植物性食物中,已顯示出具有強大的抗氧化作用,越來越多研究表明,多酚的攝取可能透過調節代謝及細胞增殖,在人體健康上扮演重要的角色。生物可獲性(Bioaccessibility)涵蓋了食物在消化過程中可能發生的事件,即在胃腸道中攝入的生物成分被上皮層所吸收。得知多酚的生物可獲性有助

於了解其對健康的影響。然而關於營養攝入的許多建議僅基於含量數據,而未考慮到消化過程發生的變化。文獻顯示,體外消化實驗對胃腸道消化的穩定性及生物可獲性測定有良好的效果,而這些實驗的關鍵為真實呈現人體胃腸道中的環境,包括化學、生化和物理條件。本研究分析三種市售機能性飲品之總酚及花青素含量,和測定其抗氧化能力,包括1,1-diphenyl-2-picrylhydrazyl (DPPH)自由基清除能力及亞鐵離子螯合能力,並在進行模擬體外消化試驗(包含口腔、胃、小腸及透析階段)後,比較上述項目之變化及得知其抗氧化能力的穩定性。結果表明,三種市售機能性飲品的總酚和花青素含量及抗氧化活性在不同的體外消化階段

發生了不同的變化,主要發生在小腸階段。總酚含量隨著消化逐漸下降,樣品A、B、C之小腸(透析與未透析)總酚含量分別為原始數值之65.6%、23.5%、16.7%。花青素在消化過程中,同樣在腸透析出的部分檢測到最低的含量,然而腸未透析的部分在四個消化階段中含量最高,代表保留在腸道中並可能被結腸利用。三個樣品之DPPH自由基清除能力介於72-89%,消化過後在小腸階段降至最低,為12-22%,且透析與未透析的部分沒有顯著差異。亞鐵螯合能力在消化後皆有提升,三個樣品原先介於21-54%之間,小腸階段大幅增加至92-94%,透析與未透析的部分無顯著差異。儘管在消化過程中酚類大幅流失,但機能性飲品仍保有其
